You're right. If none of the things he won't do are negative, it should probably be "I'd do anything for love and I won't do that". But that doesn't sound as amusing.
How about "I'd do anything for love but I won't do anything that would undoubtedly make it impossible for you to love me"?
That kinda fits in. e.g. a person may kill for love, but that may also end the love.
So the guy in the song... that's probably the kind of thing he wouldn't do for love.
But you know, I have no evidence for that and I'm just making it up.
