If you go to their website, they explain what's going on in their videos. Basically, they listen to the song on noise-canceling headphones and record themselves attempting to play along. (The drummer is the only one who even seems to be on beat. The piano guy sounds like he's pushing random buttons. The singer doesn't even try.)
