It doesn't really count, but Carrie Underwood's performance of "Making Love" would have been up there if it was the full song.
Other than that, I really like the full live version of Celine's "It's All Coming Back". She really nails those notes. Far more personal than her studio version.
Ellen Foley's "Heaven Can Wait" jumps to mind, as well as Tori Amos's "Total Eclipse".
