Since we're doing suggestions, I got one too.

I don't do much with video, except extracting audio from it, and for that I find MPlayer very useful:

If you're not opposed to some command line tinkering, it's a great tool to extract audiostreams without transcoding (i.e., mp3 from flv, aac from mp4, etc.), grab some streaming media, and what not.
