The length of the songs, crazy solos, added complexities, and over-the-top productions hide the fact that if you get right down to it, they have fairly straightforward chord progressions, distinct verses, and repeating choruses. The story about getting turned down by Clive Davis was probably in regard to "Paradise by the Dashboard Light," which does have a lot of different things going on after the second chorus. In line with Jim's theater background, though, much of it is vamping (see the attached link).
