I've been thinking about that one for a while. I'd love to hear what Meat described in his autobio as the "power trio" mix that Iovine was starting to do. Mainly piano, bass, drums. That would be interesting. Sure, the songs wouldn't be quite what they are without the guitar, but it would be interesting to hear.
Hell, I'd even hear them as just piano and vocals, because that's the closest we'd get to a demo.
