It's about accessibility. If it's longer than about 2 1/2 hours people won't be able to come and see it in a day and will have to book a hotel for the night. That will put the show out of a lot of people's price ranges: not only damaging its commercial success but also depriving a lot of people of the chance to experience what we did in Manchester!
Sadly the choice is between 2 1/2hrs for everyone and 3hrs 10mins for the privaledged few. :(
