I've done some desktop publishing work for student papers etc. and there are quite a few nice copyright free image sites out there which I'm sure would have pictures you can use. Probably the best I've found is:
http://www.sxc.hu/home
(I've checked and there are several cow pictures on there)
You have to reqister but it's completely free. Some of the photographers ask you to send them an email letting them know where their picture will be used, but all the images are free from copyright.
