Think the version on the 1975-1985 live set is amazing. Though a lot of versions from the 1978 tour where Racing intertwines into Thunder Road (also in F) are superb too.
Love Springsteen's slight change of lyric in many live versions: "Summer's long gone but the time's still right for Racing in the Street"
Springsteen did a killer version on Guitar at some live shows in 1996 together with Soozie Tyrrell on Violin. I can upload it/send it to ya if you want to hear it.
